On June 20, 2018, Ethan Headley, Director of Nutrition from Finger Lakes Health, and Neal Plazio, Executive Chef at the University at Buffalo, were honored as Culinary Creations Finalists by Premier, Inc. in a nationwide recipe contest.
“We are proud to honor Pandion’s members for their culinary expertise. Their recipes were selected as two of the top 4 in our culinary creation contest,” said Debby Kasper, RDN, LDN, Director of Clinical Nutrition and Wellness Program Development. “This contest is an opportunity for Premier’s Foodservice members to praise their peers by selecting who they consider to be top chefs in the foodservice industry.”
Headley and Plazio were recognized at the Culinary Creations Dinner during Premier’s annual Foodservice Forum, held in conjunction with its 2018 Breakthroughs Conference and Exhibition, which drew more than 4,000 providers and suppliers to Nashville June 19-21.
This year’s theme, Breakfast All Day, challenged members to create recipes that maximized fresh ingredients, used minimally processed foods, and reflected an overall healthier profile while incorporating modern sauces, bold flavors, and maintaining an appetizing appearance.
Headley’s dish, Eggs in Purgatory, is a breakfast bowl modeled after a Middle Eastern/North African Shakshuka “I tend to think regionally when I cook, so once the original idea was in my head the rest of the recipe came about rather quickly,” said Headley.
Plazio’s dish, The Breakfast Tempeh Sope, evolved from the need for additional plant-based options on his campus as well as the trend towards international flavors. “In the end, we have a dish that was a collaborative effort of the Culinary Team that will end up on the menu for brunch next fall,” said Plazio.
Both Finger Lakes Health and the University of Buffalo are members of Pandion’s Foodservice committee which provides members with a forum to share best practices, provide education through vendor presentations, review the status of current contracts, review bids and awards for new contracts, network, and more.
